The Cuvee is formed in a variable percentage of Chardonnay, Sauvignon and Cortese: grapes are all from the municipality of Strevi, Alto Monferrato.
Fermentation takes place in an isobaric environment on selected yeasts for at least one month
Straw tending to golden yellow in color with a lively mousse and fine perlage. The scent is intense, fresh and persistent with floral and fruity notes and a delicate hint of yeast. Taste is fresh, fine and well-balanced, with good aromatic persistence.
Versatile food wine, from aperitif through the entire meal. Pairs well with delicate flavors such as vegetable risotto and seafood dishes, as well as with more intense flavors, like salami, swordfish, and tuna.

The Cortese, Chardonnay and Sauvignon grapes are grown in our own vineyards located within the municipality of Strevi at 250/300 meters above sea level with south-east and south-west exposure.
20 year-old vines are cultivated using the Classic Guyot system and density is 4000 vines per hectare.
Grapes are harvested by hand between late August and early September.
