Vinification Notes

De-stemming and then fermentation with maceration on the skins for at least 10-12 days in stainless steel tanks with regular pumping over.

After aging at least four months in steel, the wine is bottled and continues aging for at least another month before release

Different red grapes from vineyards producing Piedmont DOC wines. 250 masl, calcareous soil with southeast exposure and Classic Guyot training system.
